Pirata x Fatto a Mano: A charcuterie & pizza collab worth shouting about
We’ve teamed up with serious pizza legends Fatto a Mano to showcase one of our favourite cuts — Pirata, our bold, boundary-pushing cured pork loin.
Fatto a Mano have been serving up some of the best Neapolitan-style pizza in Brighton and London since 2015. Their commitment to proper ingredients, traditional techniques, and that perfectly blistered crust made them the ideal partner for this collab. We share the same values: craft, quality, and an unapologetic love of flavour.
Made using retired British breeding sows, Pirata is all about flavour and experience. The pork we use have lived longer lives, developing mature muscle and a generous layer of creamy fat — perfect for slow curing. We hand-rub each loin with paprika, garlic, and cuttlefish ink, then air-dry it for at least four months. The result? A rich, smoky-savoury profile with a silky texture that melts on the tongue.
